I read somewhere that the AB bonus on gloves counts as the enchantment bonus for fists, which would make Improved Ki Strike useless if +5 or better gloves were available. Is this true?

Yeah, and gloves can't be disarmed, so there really is no benifit to taking the Improved Ki Strike feats whatsoever unless you somehow find yourself in a situation where you can't use gloves A Druid Monk who is in animal form would benefit from the Extra Ki. A Shifter may not benefit so much since some of his forms already have a DR setting of +3 or better. So they would strike as that + rating to determine if they bypass the DR of their opponent.

Not really, cast stoneskin and you penetrate x/+5 DR.
